After 3 hours boiling they are done.The fire size has went down too and its almost gone now.
I float a pot in a bucket of water to cool a sample off and then I put some on my refractometer.I take them off when it reads 75% and they are just right everytime.
The pan is set off and they are dipped out and strained.
The molasses are foamy;when they cool they will be darker.
