 The stalks are ran through a cane mill.The rollers mash the stalks and the juice is collected in a barrell.I like to cook 80 gallons of juice and I will get around 12 gallons of syrup.I can cook as little as 50 gallons or up to 100 gallons.This method is called pan cooking.Large operations use evaporators.With an evaporator juice goes through sections that get smaller as it travels to the end.There is always juice going in and syrup going out.I have never seen one in operation.
 My mill is a number 18 Columbus it takes one hour to get 80 gallons.
 I have a 7 hp Satley Hit and Miss engine that I have used to pull the mill but the super A does a much better job.
